     FIRM CARROT CAKE FOR LAYERING

Ingredients
1 1/2 cups self rising flour
1 cup plain flour
1 tsp baking soda
2 tsp Cinnamon
2 tsp Nutmet
1 cup brown sugar firmly packed
3 cups coarsely grated carrot
1 cup vegetable oil
4 eggs
 
1 cup sour cream

Instructions
NOTE This produces a firm, dense cake perfect for rolled fondant, carving, and wedding cakes.
Sift Flours, soda, spices and sugar in a bowl. Add carrot, stir in combined oil, eggs and sour cream, do not overmix. Add optional walnuts if using. Bake at 320F until a skewer comes out clean about 45 minutes to 1 hours.
