NOTE This produces a firm, dense cake perfect for rolled fondant, carving, and wedding cakes.
Sift Flours, soda, spices and sugar in a bowl.
Add carrot, stir in combined oil, eggs and sour cream, do not overmix.
Add optional walnuts if using.
Bake at 320F until a skewer comes out clean about 45 minutes to 1 hours.
