Preheat oven to 425. Bring 6 cups water to a
boil. Cut potatoes into 1/2 inch fries,
transfer to a bowl, cover with water. Soak
while water is coming to a boil. When water
boils drain away starchy water. Place potatoes
into boiling water and cook 3 minutes. Drain
well.
Cover baking sheet with parchment paper. On the
baking sheet, toss potatoes with olive oil,
sprinkle with kosher salt. Bake ten minutes,
flip. Bake additional ten minutes, flip. Bake 5-
10 minutes until golden brown.
