     Applesauce Cake (Vegan)

Ingredients
1/2 Cup Canola Oil
1 cup sugar
2 cups unbleached flour
1 1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
2 cups applesauce
1/2 tsp vanilla
 
Instructions
Preheat oven to 350 degrees. Mix oil and sugar well. In a separate bowl mix the flour, baking soda, cinnamon and nutmeg.
Mix the applesauce and vanilla into the oil and sugar mixture. Mix in the dry ingredients until smooth.
Pour the batter into an oiled and floured 9x13 pan and bake at 350 degrees for 45 to 50 minutes until a toothpick inserted comes out clean.
Serving Suggestions
I add walnuts (1 cup)
