One 8 oz can crushed pineapple-drained
4 large eggs
1 cup granulated sugar
1 cup brown sugar
1 cup vegtable oil
2 cups all purpose flour
2 tsp baking soda
1/4 tsp salt
2 tsp ground cinnamon
1/8th tsp ground cloves
1 cup chopped pecans or walnuts
2 cups shredded carrots
2 tsp vanilla
one 8 oz pkg cream cheese-softened
1 tsp vanilla extract 3-31/2 cups powdered sugar
3 tbsp orange juice 1/4 cup butter-softened
1/4 heavy whipping cream

preheat oven to 350 grease 9x13 pan
whisk pineapple and eggs until combined. whisk in the sugars, oil and vanilla followed by the dry ingredients until you make a batter. fold in the pecans and carrots. Put the batter in the greased pan and bake for 35-40 min.
for frosting, mix cream cheese, butter and vanilla-about one min until fluffy. Beat in the oj and gradually add in the powdered sugar- stream in the heavy cream as needed.
