     Salmon Puffs

Ingredients
7.5 Oz(213g) Can sockeye salmon, well drained
12 Oz(341ml) Can whole kernel corn, well drained
3 Tbsp(45ml) Relish
1/4 Cup(50ml) Heavy Cream
1 Tsp(5ml) Worcestershire
1 Tsp(5ml) Lemon Juice
1 Egg Yolk
2 Egg Whites, beaten stiff
Salt and pepper
 

Instructions
Place salmon,corn and relish in food processor. Blend 1 minute,taking time to scrape down sides of bowl. Add cream and continue blending 30 seconds. Add worcestershire,lemon juice,salt and pepper,blend another 10 seconds.
Add egg yolk and finish blending 30 seconds. Transfer mixture to mixing bowl and fold in beaten egg whites. Fill cups of muffin pan about 3/4 full or a little less level depending on size. Microwave 6 minutes uncovered. To unmold,run knife around edges and let stand 1 minute or so before completely removing. Serve as first course or light main course.
