flour
salt & pepper
eggs
Italian bread crumbs
oil for frying
Instructions
Pound the pork chops really thin. The thinner the better. Coat with flour, then an egg and water mix and finally dip in bread crumbs. Allow to rest on wire rack for 15 minutes. Resting keeps the breading from falling off when frying.
Fry at 350F until well browned on both sides. Remove to warm oven while frying remaining chops.
