     Carrot Casserole

Ingredients
5 lbs of fresh carrots, peeled chopped
3 eggs
1 cup brown sugar
1/2 cup matzo meal
Pinch of baking soda
Salt to taste
One stick of butter
 

Instructions
Boil carrots till soft. Drain, put back into pot. Mash carrots with potato masher, add rest of ingredients and stir. Spread into greased large casserole dish.
Bake one hour at 350° Can be made ahead and kept in refrigerator.
