Melt the coconut oil in the microwave. Stir in the
oats, pecans, 2 tbsp flour, 2 tbsp sugar, 1/4 tsp
cinnamon and salt. Mix well to combine
Chop the apples and toss them with 1/2 tbsp flour,
1/2 tbsp sugar and 1/4 tsp cinnamon.
Layer a little spoonful of the oat mixture in the
bottom of a small baking dish or divide into 2
mugs. Top with the apple mixture and then
remaining oat mixture. Microwave for 3 1/2
minutes.
Note- I added vanilla and a splash of lemon juice.
I microwaved for 5 1/2 minutes. I ate with a scoop
of df icecream on top. Yum!
You can also drizzle honey over the top after
cooking for extra gooey texture.
