Crumble the butter or margarine into the flour.
Add the sugar and the egg yolk. Kneed the dough
through and then place in the fridge for at least
Roll the dough into a sausage of approximately 4-
5 cm diameter. Cut the sausage into slices
roughly 5mm thick, Place on a baking tray lined
with greaseproof paper. Whisk the egg white
lightly (just to break it up) and brush the
cookies with the egg white and then add mixed
sugar/cinamon on top. Add flaked almonds or
chopped hazelnuts if desired.
Bake for 5-10 minutes at 225 deg.c.
Place greaseproof paper with the cookies on a
cooling rack and let cool down completely.
