     Nana's meat loaf

Ingredients
2lbs ground round
1lb ground pork
3/4 c finely smoked ham, chopped
1 green pepper, minced
1 sm onion, minced (about 1 cup)
2 lg eggs, lightly beaten
4 c soft breadcrumbs
1/3 c ketchup
1/4 c firmly packed lt brown sugar
 
1/4 c maple syrup
3 TBSP worcestershire sauce
2TBSP hot sauce
1 can tomato sauce, 15 oz
4 slices bacon

Instructions
NOTES mince onions and peppers, large pieces make meatloaf crumble. 8 slices of bread in food processor for br crumbs To Make Ahead- omit tomato sauce and bacon. Wrap unbaked loaf in plastic wrap and foil. Freeze up to 1 month.
1. Combine first twelve ingredients in a lg bowl. 2. Shape into 2 (9 x 4in) loaves. 3. Place on a lightly greased rack in a broiler pan. 4. Pour tomato sauce over loaves 5. Cover each loaf with 2 pieces of bacon.
6. Bake 350 for 1 hr 15 min. Let stand 10 min before slicing
