     Rhubarb Cake

3 eggs
1 cup olive oil
1 cup sugar
2 cups flour, I used gluten free Bob's Mills
2 tsp cinnamon
1 tsp baking soda
dash salt
1 tsp vanilla
1 cup chopped nuts
4 cups diced rhubarb

Combine eggs and oil, beat until foamy. Add sugar, beat until light colored and thick. Combine dry ingredients, stir into batter. Add vanilla, nuts, and rhubarb by hand. Sprinkle on topping if desired. Pour into 9x13 greased pan. Bake 350 40-45 minutes.
Topping- 2/3 cup oats, 2/3 cup brown sugar, 1/3 cup chopped nuts, 1/4 cup melted butter, 1/2 tsp cinnamon. Mix together and sprinkle over batter.
I increased the cooking temp to 375 about half way through.
