Preheat oven to 450 degrees. Place sausage on
baking sheet. Cook for about 15 minutes.
Transfer sausage to cutting board to sit.
Halve, core and de-seed pepper and onion. Thinly
slice.

Drizzle oil in large pan over medium high heat.
Add pepper and season with salt and pepper. Cook
for 2-3 min until softened. Add onions and season
with salt and pepper. Stir until tender and
lightly browned, 5-6 min. Add 1tsp sugar and 2Tb
water. Cook until veggies are caramelized and
slightly jammy. Transfer to bowl and set aside.
Clean pan.

Cut sausage diagonal when cool. Melt 1 tb butter in
pan over medium heat. Add two slice of bread, top
with sauce, veggies cheese, then other slices of
bread. Cook until golden brown

NOTE- Use any leftover veggies you desire.
