     Adaptation of Sausage and Pepper Melts

Ingredients
1 long green pepper or bell pepper
1 yellow onion
2 pork sausage
4 white bread slices
1/2c of shredded pepper jack
1tsp sugar
2Tb butter
2tsp oil
 

Instructions
Preheat oven to 450 degrees. Place sausage on baking sheet. Cook for about 15 minutes. Transfer sausage to cutting board to sit. Halve, core and de-seed pepper and onion. Thinly slice.
Drizzle oil in large pan over medium high heat. Add pepper and season with salt and pepper. Cook for 2-3 min until softened. Add onions and season with salt and pepper. Stir until tender and lightly browned, 5-6 min. Add 1tsp sugar and 2Tb water. Cook until veggies are caramelized and slightly jammy. Transfer to bowl and set aside. Clean pan.
Cut sausage diagonal when cool. Melt 1 tb butter in pan over medium heat. Add two slice of bread, top with sauce, veggies cheese, then other slices of bread. Cook until golden brown
NOTE- Use any leftover veggies you desire.
