1-1/4 cups Graham cracker crumbs (9 crackers)
3 TBSP sugar
3 TBSP vege oil - or coconut oil
1-15 oz can pure pumpkin (vitamin A, fiber, K)
3/4 cup well-stirred coconut milk - lactose free
2 lg eggs
3/4 cup light brown brown sugar
1/2 tsp salt
1 tsp freshly grated ginger
1/8 tsp freshly grated nutmeg-microplane
1/2 tsp cinnamon
whipped cream - optional

350 oven 9 inch pie plate Medium bowl - graham cracker crumbs, sugar, oil -mixture will be dry. Press into bottom and up side. Bake 15 mns Let cool wire rack
Large bowl- whisk pumpkin, coconut milk, eggs, sugar, and spices. Pour into crust, smooth the top. Bake until set, except in center, and crust is brown 45-60ms Cool wire rack
