     Lentil Loaf

Ingredients
2 cups lentils, (1 cup cooked)
1/2 onion, diced
2 carrots, diced
2 celery stalks, diced
1/2 cup diced red bell pepper
1 1/4 cup diced crimini musrooms
2 cloves garlic, minced
2 TBsp tomato paste
1 TBsp BBQ sauce
 
2 TBsp flax meal
1 TBsp dried parsley
1/4 tsp salt
1/4 tsp pepper
1/2 cup quick oats
1/2 cup bread crumbs
1/3 cup ketchup
brown sugar

Instructions
Preheat oven to 350 degrees. In skillet saute onions, carrots, celery, pepper, & mushrooms with a pinch of salt and pepper until soft. Add garlic, saute 1 min longer. In a food processor pulse together drained lentils, cooked veges and remaining ingredients. Blend into a chunky dough. Do not puree.
Form into loaf or fill bell pepper halves with mixture. Bake for 35 minutes. Remove from oven, spread ketchup on top and sprinkle brown sugar. Bake 10 more minutes. Cool 10 minutes.
6 servings, Each serving 190 calories, 35g carbohydrates, fiber 8 grams, protein 10 g
