     Northern Ontario Ruffed Grouse

Ingredients
4 boneless grouse breast halves
8 slices bacon
1 cup chicken broth (plus some for reserve)
1 cup white wine
2 shallots, diced
4 cloves garlic, crushed
1 tsp salt
Fresh ground black pepper (to taste)
3 tbsp flour
 

Instructions
Preheat oven to 325f. Heat a skillet to over medium high heat. Fry bacon until cooked but not crispy. Remove and put aside. Brown grouse breasts in hot grease, approx 2 min per side. Remove grouse from pan, using a toothpick wrap each half with bacon.
Add enough of the bacon grease to cover the bottom of your baking dish. Arrange the grouse evenly, then add the broth, wine, shallots, garlic, salt, and pepper. Roast uncovered for 45 minutes.
Remove drippings from the dish with a baster, and transfer to saucepan. Mix flour with reserved broth, and combine in the saucepan. Wisk over medium low heat until thickened.
Add gravy back to roasting dish and serve.
Serving Suggestions
Serve with roasted root vegetables and rice
