Mix water with sugar and bring to a boil in a sauce
pan until it bubbles.
Start beating the egg whites on high and add the
1/4 cup of sugar. Once sugar reaches 245 F, start
slowly adding it to the egg whites on high.
Add splash of vanilla when temperature is warm and
keep mixing on high until it cools and is shinny.
Ensure all utensils are clean. Use a bit of white vinegar to clean them.
