In large mixer bowl combine potato flakes,
sugar and butter chunks. Add scalded milk and
combine.When mixture is lukewarm add eggs,
yeast and flour to form a soft dough. Knead
additional 5-7 min with the electric mixer
using the dough hook. The dough will be sticky.
(sometimes you don't need the entire 7 cups of
flour. It is better to use less flour -
usually ends up being about 6 1/2 cups)

Oil a large bowl, place dough in bowl, cover with
plastic wrap and let rise until double (1 1/2
hrs.Divide dough and roll and cut into shapes. Let
rise for 3 more hours or until double in size.

Bake at 365 for 10-12 min or until golden brown on
top.

|
If making ahead and freezing, let dough rise
once, shape into rolls, place on greased cookie
sheet and freeze. After rolls are frozen you
can place them in a gallon bag. When ready to
use, place frozen rolls on oiled cookie sheet
and let rise about 6 hours or when the double.
