     Blueberry muffins GF, DF

Ingredients
1 1/2 cups gf flour
1/4 tsp xanthan gum (leave out if its in the flour)
1 cup sugar
1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 tsp dried lemon peel
2 large eggs
1 tsp vanilla
 
1/3 cup butter melted (smart balance)
1 cup almond milk
1 cup blueberries
1 Tbsp flour
CRUMB TOPPING
2 Tbsp brown sugar packed
1 Tbsp sugar
2 1/2 Tbsp gf flour
1 Tbsp butter melted (smart balance)

Instructions
Preheat oven to 350. Line a muffin pan with liners. In a large bowl, whisk together first 7 ingredients. In a medium bowl, whisk together the eggs, vanilla, melted butter and milk. Add the flour mixture and mix until fully combined. In a small bowl toss the blueberries with the 1 Tbsp flour. Fold the blueberries into the batter. Distribute mixure into muffin cups. Mix crumb topping. Sprinkle on top of the muffins. Bake for 25-30 min.
