Pat chops dry. Sprinkle generously with with
spices.

Heat skillet to medium high. Add olive oil. When
shimmering hot, add chops. Sear on one side until
golden brown. About 3-5 minutes. Then flip sides
and do the same.

Use a meat thermometer. Done when 135 degrees.
Remove from skillet and let them rest on a plate
for 10 minutes while they continue cooking.
Eventually will reach 145 degrees.
