     Mac n Cheese - best version

Ingredients
1 lb elbow pasta
1/2 cup butter
3 shallots
1/2 cup flour
5 cups whole milk
8 oz velveeta
8- oz good cheddar, graded
panko breadcrumbs or other breadcrumbs for topping
 

Instructions
Pre heat oven to 350 degrees. Cook pasta. Melt butter in dutch oven, add shallots, sautee until transulcent. Whisk in flour and stir continuously for 1-2mins.
Whisk in milk slowly, then allow to come to a simmer over medium heat. Let it heat up slowly so the milk doesn't burn. Once bubbling, add the cheese and stir until combined. Add the cooked pasta.
Pour into casserole dish and top with breadcrumbs. Bake for about 30 minutes (until bubbly).
