Put the chicken in a large pot, cover with water. Bring to a boil and
simmer until tender. About 1-2 hours. Put in some salt, pepper and
1/2 a large onion cut into two large rings and separated. When done,
remove from broth and pick meat off bones. Tear into bite size
pieces.
In large bowl put in all the other ingredients gradually adding 4-5 1/2
cups flour. Mix with fork until stiff then use hands. Dough will be very
dry and stiff. Pull off a handful and roll out on floured surface and cut
into pieces. Roll very thin and dredge in flour and lay aside. Add Salt
and Pepper on the dumplings. Add 1 stick of butter to the broth and
bring broth to the boil add dumplings to broth one at a time, pushing
down and separating, boiling gently for a few minutes. Cook until
dumplings are not mushy and add chicken. ENJOY!
