     Spinach and Almond Meatloaf

Ingredients
1 1/2 lb lean ground beef
1/4 cup toasted roasted almonds
1 C skim milk
1 T Worcestershire sauce
1 1/2 t dried basil
1/2 t salt
1/2 t ground mustard
1/4 t pepper
1/4 t garlic powder
 
3 slices whole wheat bread crust removed and cut into small pieces
1/4 C finely diced onion
1 pkg. frozen chopped spinach (10oz) thawed and squeezed dry

Instructions
Heat oven to 350 degrees Peel and cut up potatoes and carrots. Parboil potatoes and carrots for about 15 minutes, spread them around the meatloaf.
Make glaze- 1/2 C Ketchup 1/3 cup brown sugar 1/4 cup lemon juice 1 teaspoon mustard powder Whisk together and poor over meatloaf and vegetables
Bake for 1 1/2 hours Per serving size- 190 cal. 33% from fat, 7 fat grams 2.1 saturated, 74 milligrams cholesterol, 9 grams carbohydrates, 24 grams protein, 251 milligrams sodium, 2 grams dietary fiber. (Not including glaze
