     Pineapple Skin Juice

Ingredients
Pineapple skin
1 knob of ginger, sliced
Honey, sugar, rock sugar
 

Instructions
Reserve the pineapple skin. Cut out as much of the meat out of the skin and reserve. Cut the skin into 2-3 in pieces. Scrub the skin well and soak the skin in water a couple of times for about 20 minutes to discard any chemicals on the skin.
Put the skin and leftover pineapple meat into a pot. Add enough water only to cover the skin/meat. Add ginger. Boil on low for one hour. Then let the drink sit to cool down for an hour or over night in fridge. Mash the pineapple and strain the liquid.
Serve over ice.
NOTE- Only drink about 1 cup a day because the pineapple enzyme is a natural laxative.
