     Cabbage Manja

Ingredients
5 pounds of Boston Butt Pork Roast
2 sticks butter
3 Large cut up onions
Salt, pepper
Paprika - 3 Heaping Tablespoons
3 heads of Cabbage
Opt- 3 handfuls of sweet cut up banana peppers (I use a little hot)
2 15 oz. can tomato sauce
4 fresh lemons
 

Instructions
Brown about 5 lbs. or more of cut-up Pork (Boston Butt) in (2) sticks of Butter. Meat does not need to be cooked all the way through just sauteed. Add 3 large regular chopped up Onions in med- large pieces & fry it up with the meat.
Throw in some Salt & Black Pepper (heavy on the black pepper) Stir in 2 tablespoons Paprika (it can burn easily so don’t cook it too long) Be sure you are stirring every so often during this whole process. I added about 30oz (2-15 oz med Tomato Sauce), stir & cook awhile. Then fill both cans with hot Water & add to the mixture. (fill them twice so to have plenty of liquid)…maybe more. You want to cook it long enough for the meat to get a little tender. (It will be cooking in the oven to complete the tenderness) While it’s cooking I added some frozen cut-up Peppers (I had from my garden last summer). About 3 handfulls. Taste for salt & pepper.
In the meantime…Fill the roaster with cut-up Cabbage. Approximately 3 heads of cut up cabbage or less - bite size. Squeeze 4 lemons over all the cabbage. (I first squeeze it in a bowl so to pick out the seeds) spoon meat mixture over all the cabbage and mix. Put the lid on roaster & Bake for approximately 2 hours or more until the cabbage is cooked thoroughly and the meat is tender. Be sure to mix halfway through the baking. (375 Oven in covered dish, around 2 hours or more)
(By the way, if you like Cauliflower, you can use that instead of cabbage)
Serving Suggestions
This is a very large recipe that is cooked for the entire family on New Years day. You may want to cut the recipe in half!
