     Shrimp Au Gratin

Ingredients
1/4 tsp. Italian seasoning
1/8 tsp. Cayenne pepper
1/4 tsp. garlic powder
1/8 tsp.. black pepper
1/4 tsp. salt
1 Tbl. olive oil
3 Tbl. unsalted butter
1/8 Cup minced shallot
3/4 tsp. minced garlic
 
3/4 lb. medium raw shrimp (about 24), cleaned
1 Tbl. chopped chives (we used the green part of the green onion)
1 Tbl. flour, plus 1 tsp.
1 Cup milk
11/3 Cup heavy cream
1 tsp. lemon juice
1 Cup shredded Monterret Jack cheese
1/2 Cup Shredded Parmesan
1/2 Cup Panko Breadcrumbs

Instructions
Preheat oven to 400 deg. Lightly spray a quiche pan with Pam. In a large skillet, heat oil and 2 Tbl. butter over medium heat. Add shallots and garlic and saute' for 1 minute. Stir in the seasonings. Add shrimp and cook about 2 minutes, until shrimp is just turning pink.Stir in the Chives. Pour this mixture into the prepared pan.
Add remaining tablespoon butter to pan and when melted, whisk in flour. Do not let flour brown. Whisk in the milk and cream and cook, whisking constantly, until mixture begins to thicken, about 5 minutes. Add lemon juice and 1/2 of jack cheese. Spoon sauce over the shrimp.
Sprinkle remaining cheeses over the top and then sprinkle Panko evenly over that. LIGHTLY spray Panko with Pam to help brown. Bake for 15 minutes or until brown and bubbly.
Serve with rice or angel hair pasta or with baguettes to soak up the sauce. This dish is Really Good! I would make 1-1/2 times the sauce if serving baguettes.
