     Lemon Whip Dessert - sugar free

2 boxes sugar free lemon gelatin
2 C boiling water
1 C cold water
1/3 C reduced fat sour cream
1/3 C part skim ricotta
1/3 C reduced fat cream cheese
1/2 tsp lemon extract

Dissolve gelatin in hot water, add cold, cover and put in fridge funtil firm.
In a blender combine sour cream, ricotta, cream cheese and lemon extract. Blend until light and fluffy.
Cut gelatin into sections and add to the blender mixture. Blend on high speed until smooth and frothy 3-4 min.
Pour into individual serving dishes. Cover and refridgerate for at least 1 hour or overnight.
