     BBQ Pork Tenderloin

Category   Entrees - Maindishes
Sub Category   None
Servings   3
Preptime   45 min

4 corn cobs or 1 can of corn, kernels off the cob
1lb of broccoli, removed from stems and trimmed
1.5Tb BBQ spice blend
2 clove of garlic, minced
20oz of pork tenderloin, 4 pieces
2ts apple cider vinegar
2ts sugar
1Tb butter

Preheat oven to 450 degrees with center oven racks. Pat pork dry and lightly drizzle each piece with oil. Roast on one side of the rimmed baking sheet for 6 to 7 minutes.
In a small bowl, combine garlic, 1/4c oil, vinegar and sugar. Add salt and pepper to taste. I added about 1 tsp of kosher salt.
Toss broccoli with oil, salt and pepper. Flip pork and brush with the BBQ glaze over the top. Add broccoli to the other side of the baking sheet. Cook both for another 6 to 7 minutes.
Melt 1Tb butter and 1Tb oil in medium skillet over medium high heat. Add corn and stir until cooked. Thinly slice pork and brush with remaining glaze. Serve with corn, broccoli and bread.
