     Canadian Bacon

Ingredients
4-6 lb pork loin roast
4 cups water (boiled
4 cups ice water
1.5 TBSP pink curing salt
1/2 cup kosher salt
1 cup brown sugar
1/2 cup pure maple syrup
2 TBSP garlic
1 TBSP black pepper
 
1 tsp coriander seeds

Instructions
Mix the 4 cups water with all the other ingredients. Bring to almost boil and mix until dissolved. Add to the ice water and then cover the loin with the whole lot! Let marinade for about 4-5 days. After the time is up take out of the brine and dry with paper towels. Put on a drying rack and set it in the fridge for about 24 hours. This will allow it to form a pellicle and the smoke to adhere to the loin. After 24 hours you will notice it feels a little sticky. At this point its time to smoke it at 225 to an internal temp of 145!!
