Place a large, heavy-bottom pan over medium-high heat. Add about 2
Tbl. olive oil. Once oil is hot, crumble the spicy sausage in the pan in
small chunks and brown for a few minutes. Remove with slotted
spoon and put into a bowl.
Add the bell peppers, salt, italian seasoning and black pepper to the
pan. Stir to combine. Allow to saute for about 2 minutes until slightly
tender. Then, add in the garlic . Once this is aromatic, add white
wine and reduce the wine until almost completely reduced.
Add in diced tomatoes with juice. Drizzle in about 2-3 Tbl. of olive oil
to create a silky, rich flavor. Add the chopped parsley and about half
of the basil.
Return the sausage back to the pan and gently fold the mixture to
combine. Allow to simmer about 3-4 minutes. Remove from heat.
Prepare the egg noodles and drain well. Add them directly into the
sauce, using tongs to gently toss. Garnish served dish with remaining
basil and shaved parmesan, if desired.
