     Hasselback Roasted Sweet Potatoes

4 small sweet potatoes
2 Tbsp olive oil
2 Tbsp pure maple syrup
1 Tbsp fresh thyme leaves

Preheat oven to 425. Place rack in upper 1/3 of oven. Oil rimmed baking sheet. Combine syrup, oil, and thyme.
Halve potatoes lengthwise. Place Potato cut side down on cutting board. Place wooden spoons on each side of potato, cut crosswise slits 1/4 Inch apart down length of each potato. Place flat side down on baking sheets. Brush with oil mixture. Salt and pepper to taste.
Bake 25 to 30 minutes.
