     Peppered fish (Ghana recipe)

Ingredients
2 lbs thick white fish, cut into pieces about 3 inches each
5 tomatoes
1 red bell pepper
2 habanero peppers
1 md onion
1 stem green onion
5 garlic cloves
1/2 inch piece ginger root, peeled
2 small seasoning stock cubes---Maggi
 
1 tsp salt
1/2 tsp whit pepper
1 C peanut oil
Oil for deep frying fish
Dried spices for seasoning fish
1/2 tsp each of garlic powder, ginger powder ad onion powder

Instructions
Wash and dry fish pieces and season with dried spices. Mix well and set aside.
Heat oil in a large pot and deep fry the fish until golden brown on each side. Be sure to flip when one side gets brown so the fish is evenly cooked. Cook fish in oil for about 8 minutes, 4 minutes each side. Remove and place on paper towel
In a blender put tomatoes,onions,bell pepper,garlic, ginger and green onions. Blend into a puree.Pour 1 cup of oil into another pot. Heat it on high for about 5 minutes and then pur in puree. Let it cook for about 10 minutes until the pepper tomato sauce shrinks and starts sticking to the bottom of the pot. Add in half a tsp of salt, Maggi and white pepper. Stir well
Add in fried fish and stir to ensure the sauce properly coats the fish. Simmer about 3 minutes. Then turn off heat and enjoy.
Serving Suggestions
I served it with rice and plantains. Really good
