15oz or 24 average size pieces of frozen cheese ravioli
1 1/2 tsp olive oil
3 medium, minced garlic cloves
10 oz frozen chopped spinach thawed
1 1/2 cups fat free marinara sauce
3/4 cup shredded mozzarella cheese
Instructions
Preheat oven to 375. Coat 12 muffin pans with
cooking spray. Boil and drain ravioli.
In skillet over medium heat, warm oil and garlic
until fragrant about 2 minutes. Remove from heat.
Squeeze as much liquid as possible off spinach and
fluff with fingers. Stir spinach into oil mixture.
In each muffin cup, layer ravioli, 1 tbsp
marinara, about 1 1/2 tbsp spinach, 1 ravioli, 1
tbsp marinara, and 1 tbsp mozzarella. Bake
uncovered, until sauce is bubbly and cheese
melts, about 15 minutes. Broil 1-2 minutes to
brown cheese, if desired.
