     Pork chops Ciambiotta

Ingredients
6 boneless pork chops
sliced hot cherry peppers or banana peppers
sliced mushrooms
salt and pepper
parsley
white wine
olive oil
garlic
2 large potatoes, peeled, sliced and seasoned with salt and pepper
 
canola oil

Instructions
Trim pork chops, season with salt and pepper and saute in olive oil with garlic until browned on both sides. Add about a cup of white wine, add peppers with some juice, add mushrooms, season with salt, pepper and parsley. Cover and cook about 45 minutes.
In a separate pan heat about 2 inches of canola oil and add sliced potatoes. Fry and drain on paper towels. When ready to eat add potatoes to pan with pork chops and cook until heated through
