1 onion cut up.
|

1 Tablespoon butter
|
|
1 pound carrots cut up. About 3 large.
|

3 cups broth of choice, vegetable, chicken, bone
|
|
1 Tablespoon fresh ginger grated
|
|
1/4 cup sour cream or coconut milk
|
|
Salt and pepper to taste
|

|
|
|

Instructions |
|
|
In a Dutch oven, melt butter and add onions. Saute for 6
minutes until softened.
|

Add carrots, ginger and broth. Bring to boil. Lower temperature
and simmer for 40 minutes until the carrots are cooked
through.

|
Using an immersion blender or blender, purée the soup until
smooth.
|
|
|
Add salt and pepper to taste. Stir in sour cream. Serve.
