     Angel Biscuits

Ingredients
1 pkg active dry yeast
1/4 cup warm water ( 105-115f)
5 cups sifted flour
1 tbsp baking powder
1 tsp baking soda
1/4 cup granulated sugar
2 tsp salt
1 cup shortening
2 cups buttermilk or sour milk
 

Instructions
Preheat oven 400F. Dissolve jest in warm water and set aside. Sift together flour, baking powder, baking soda, sugar, salt. Cut in shortening. Pour in buttermilk and yeast mixture & toss briskly with fork just until mixture holds together forming a soft dough.
Turn out (sticky) dough on flour, knead lightly 1 minute. Roll 5/8 inches thick. Cut. Bake on undressed baking sheet 15 minutes until pale tan on top.
Dough can be covered, refrigerated and kept for 1 week.
