     Scallops with Corn Avocado and Bacon Salsa

Ingredients
8 lg scallops well dried off
2 T EVO
2 T butter
salt and pepper
Salsa-
12 cherry tomatoes quartered
1 red bell pepper diced
4 bacon strips cooked and chopped
 
2 ears of sweet corn (I used frozen)(1 1/2 to 2 cups)
1 avocado diced
1/2 red onion diced
2 limes juiced
2 T EVO
Fresh cilantro. I did not have.

Instructions
Cook the bacon till crispy then chop. Using 1T of bacon fat and the frying pan that you fried bacon in add peppers, red onion, and corn to pan. Cook 4-5 min or till tender.
Take salsa out of the pan and add in to the salsa the avocado and tomatoes. Stir gently and set aside. Add juice of lime and EVO
Make sure scallops have been dried off with paper towel. Heat butter and oil and add scallops to the pan. Sear scallops for 6-8 min flipping half way through. Let scallops rest for 2-3 min. Serve scallops on top of a helping of salsa.
If you have extra salsa try serving with cooked chicken breast or in a fish taco or with shrimp. We really liked this and served 3 scallops and lots of salsa and garlic bread for a lite dinner.
