     Spanish Chicken

Ingredients
2-3 lbs chicken
1 packet of sazon
2-3 tablespoons of sofrito
3-4 tablespoons of oil
1 can of tomato sauce
1 can of corn (or equal frozen)
desired vegetables (canned, frozen, fresh)
salt/pepper to taste
 

Instructions
In a hot tall sauce pan, or an electric griddle. Combine oil and sofrito, let flavors infuse briefly. Add sazon and let flavors infuse briefly. Add can of tomato sauce, once bubbling add can of corn (liquid and all). Add salt to taste (should be a little salty but not too salty). If using canned carrots and potatoes, add in water and all. If using frozen or fresh veggies, add in veggies and half a cup to a cup of water. Add in chicken (I typically get about 5-6 thighs or 2-3 large chicken breasts in the pan). Turn down to a simmer (medium low) and simmer for 20-30 min, until chicken is done, if using fresh veggies/potatoes make sure they are cooked thoroughly.
