Bring a small saucepan of water to a boil. Or use the water in the pan for the eggs.
Separate the yolks and whites of three eggs. Put the yolks into a double boiler (or good saucepan) Place over low heat and stir the yolks with a whisk until they begin to thicken. Add 1 Tbsp. of the boiling water. Whisk again until the yolks begin to thicken again. Repeat the process until you have added 3 Tbsp. of water.
