     Hollandaise Sauce

Ingredients
3 egg yolks
1/2 cup butter melted
boiling water
1 plus Tbsp of vinegar or lemon juice
pinch of cayenne pepper
 

Instructions
Bring a small saucepan of water to a boil. Or use the water in the pan for the eggs. Separate the yolks and whites of three eggs. Put the yolks into a double boiler (or good saucepan) Place over low heat and stir the yolks with a whisk until they begin to thicken. Add 1 Tbsp. of the boiling water. Whisk again until the yolks begin to thicken again. Repeat the process until you have added 3 Tbsp. of water.
Remove pan from the heat. Beat the sauce well with the whisk. Continue to beat while slowly adding the melted butter and a pinch of salt and cayenne pepper. Beat until sauce is thick. Then beat in warm lemon juice or vinegar to taste.
NOTE - if Hollandaise begins to break down at any point - add 1 Tbsp. of boiling water at a time and whisk until smooth again. It will work - I promise.
