     Lemon Curd

Ingredients
3 tbsp butter
1/4 cup sugar
3 egg yolks
1 lemon
 

Instructions
Zest lemon. Juice lemon. Whisk sugar and egg yolks in a small pan over medium low heat. Add butter and whisk for 2-3 minutes until butter is melted. Whisk in lemon zest and lemon juice. Continue cooking, whisking intermittently, until thickened, about 8-10 minutes.
Remove from heat and allow to cool. Place in a jar and place in fridge. It will continue to thicken as it cools.
Serving Suggestions
This is excellent with the baked blueberry oatmeal. also good on scones, biscuits, pancakes, etc.
