     Mini Meatloaf Muffins

1 and 1/2 lbs gd beef
2/3 panko bread crumbs
1/2 cup chopped onion
1 T barbecue sauce
1 T mustard
1/2 t garlic powder
1 and 1/2 t chili powder
1/2 t salt
1/2 t black pepper
1 egg, slightly beaten
1/3 c brown sugar
1/2 c ketchup
2 t dijon mustard
1/4 t nutmeg

1. Preheat oven to 350 degrees. 2. In a large mixing bowl, combine ground beef, breadcrumbs, onion, 1 T barbecue sauce, mustard, chili powder, salt, pepper and egg. 3. Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes. 4. In the meantime, mix the sauce ingredients in a small bowl. 5. Remove the meatloaf from oven and pat grease from top with paper towel. Spoon sauce over top. Return to oven for additional 15 minutes.
Flash freeze for a little while until you can easily remove the ones you want to leave in freezer and put in a freezer bag and then take out the muffin tin for baking. When ready to do the rest, take out and let thaw in freezer bag in fridge ovenight then put back in muffin tin.
