     LEMON BREAD

Ingredients
1 CUP CRISCO SHORTENING
2 CUPS GRANULATED SUGAR
4 LARGE EGGS
1 CUP BUTTERMILK
2 CUPS FLOUR
1/2 TSP SALT
1/2 TSP BAKING SODA
ZEST FROM 2 LEMONS
1 CUP CHOPPED NUTS
 

Instructions
Preheat oven to 350 degrees fahrenheit. Combine juice from 2 lemons with cup sugar, and stir frequently until sugar is dissolved. Set aside. Cream shortening and sugar, blend in eggs, then buttermilk.
Sift flour, salt and baking soda, add lemon zest and blend in. Add flour mixture to creamed mixture and stir just until blended. Stir in nuts. Divide batter equally between two 9 x 5 x 2 3/4 inch bread pans or three 8 x 4 x 2 inch bread pans.
Bake for 40-55 minutes, depending on oven and size of bread pans. Place on racks and let cool for 5 minutes.
Pour lemon juice sugar mixture over loaves and let sit for hour. Remove from pans and let cool.
