     Beef and Broccoli - Pressure Cooker

Ingredients
Sauce Mixture -
1/3 Cup soy sauce
2/3 Cup beef broth
2 Tbl. brown sugar
4 cloves minced garlic
1 inch fresh ginger, grated (I used 1/2 tsp ground)
Other ingredients -
2 lbs well marbled chuck roast, cut into strips
 
1 lb. fresh broccoli florets (I used less)
2 tsp. toasted sesame oil
3 Tbl. cornstarch

Instructions
Add sauce mixture ingredients to the pressure cooker pot and stir until well combined. Add beef strips and toss to coat.
Secure the lid. Make sure vent is closed. Select Pressure Cook function and program for 10 minutes. When timer is up, use the quick release method to release the steam.
Remove 1/4 Cup of cooking liquid and mix with the cornstarch. (If you can't get 1/4 cup, add a little water.) Stir this cornstarch slurry, broccoli florets, and sesame oil into the pot in Saute' mode for 5 minutes until broccoli is tender and sauce is thickened. Leave lid off for Saute' mode.
Serve over rice. I think this was good enough for company. Beef was very tender. Purchased from Fresh Market.
