     Instant Pot Crack Chicken Chili

Ingredients
1 lb boneless skinless chicken (thighs or breasts)
1 15 oz can black beans drained and rinsed well
1 9 oz can whole kernel corn drained
4 oz can diced green chilis (I used 505 green chiles)
6 slices of bacon cooked and crumbled
1 1oz packet ranch seasoning mix - like Hidden Valley
1 TBSP chili powder
1 tsp ground cumin
1 tsp onion powder
 
1/4 tsp garlic powder
1 15 oz jar salsa or ranchero sauce
2 Cups Chicken Stock
8 oz package cream cheese softened to room temp and cubed
2/3 cup shredded cheddar cheese

Instructions
Add chicken to bottom of Instant Pot. Top with black beans, corn, tomatoes, green chiles, bacon, ranch seasoning, chili powder, cumin, onion powder, and garlic powder. Pour in chicken stock. DO NOT Stir
Secure IP lid, make sure its set to Seal. Pressure cook for 15 minutes on High (If frozen chicken is used, add two minutes to time) When timer beeps, quick release and remove lid. Use tongs to remove chicken from pot. It will be very tender and may fall apart. Place in mixing bowl or on cutting board and shred using either two forks or a small hand mixer.
Return chicken to the pot and select Saute. Add cubed cream cheese and shredded cheddar cheese and stir until both are completely melted into the chili. If desired you can make a cornstarch slurry and thicken the chili.
