     Varenyky (Pyrohy)

Ingredients
6 (3) cups flour
2 (1) cup lukewarm water
1/2 (1/4) cup Mazola oil
1 egg
1 (1/2) Tbsp salt

Potato Filling
3 cups mashed potatoes
 
1/2 cup cottage cheese
Salt and pepper to taste
1/2 tbsp onion, chopped

Instructions
Beat egg and add warm water and oil. Blend well, then add flour and salt. Knead dough until smooth and soft. Cover dough and let rest 15 minutes. Roll out thin and cut into squares or rounds. Place a teaspoon of filling on each piece, pinch edges well together to seal. Drop into boiling salted water and boil for 8 minutes, approximately. Strain in colander, then place in dish. Add melted butter or margarine and toss gently.
Potato Filling- Sauté onion in oil and add to potato and cheese. Mix well.
