     Beef - Crockpot Roast

Ingredients
2- 3 Lb. Eye of Round, Bottom Round or Chuck Roast
1/2 tsp. Salt
1/4 tsp. pepper
1 TBS, Vegetable Oil
3 medium Potatoes
1 !/2 Cups baby carrots
1 Medium Onion, chopped
1/2 - 1 lb. Fresh Mushrooms
3-4 Cloves of Garlic, minced
 
1 can (14 1/2 ounces) Italian Dices Tomatoes
1 Jar (12 ounce) Home-Style Beef Gravy
1/4 cup Red Wine
1 TBS. minced fresh Parsley -optional.

Instructions
Salt & pepper the roast and brown in vegetable oil.
Cut each potato into 8 wedges or chunks. In a 5 qt cooker combine the potatoes, onions, carrots and garlic. Place roast on top. Combine the tomatoes, gravy and wine then pour on top.
Cover and cook on high for 5-6 hours or until meat and veggies are tender. Sprinkle wit parsley.
Serving Suggestions
Crisp salad, and crisp bread
