     Hollandaise Sauce (Maple Inn)

Ingredients
3 egg yolks
Juice of one lemon
1 tsp of good dijon mustard
generous pinch of cayenne pepper
salt to taste
1 stick butter (1/4 cup)
 

Instructions
Combine the first five ingredients in a high powered blender.
Melt the butter in a saucepan until hot and bubbly.
Turn on the blender and stream the hot butter into the egg mixture until well combined.
Serving Suggestions
Serve with my classic Eggs Benedict.
