Pre-heat oven to 425 deg, lightly grease an oven
tray or baking dish with the vegetable spray. Set
aside.

Whisk together the eggs and garlic in a shallow
dish. Dredge the chicken slices into the egg
mixture rotating to evenly coat each piece.

|
Mix the breadcrumbs and parmesan cheese together
in a separate shallow bowl. Dip chicken into the
mix to coat evenly and set aside. Heat the oil in
a large skillet over medium-high heat until hot
and shimmering. Fry chicken until golden and
crispy. About 3-4 minutes each side.

Place chicken in prepared baking tray or dish and
top each breast with about 1/3 cup of sauce and
sprinkle generously with the shredded mozzarella
and parmesan. Bake for 15-20 minutes or until
cheeses is bubbling and melted and the chicken is
fully cooked.
