     Crispy Chicken Parmesan

Ingredients
for the CHICKEN
2 large eggs
1 tbsp fresh minced garlic
3 large chicken breasts halved and pounded horizontally to make 6 fillets
1-1/2 cup seasoned breadcrumbs
1/2 cup grated parmesan cheese
1/2 cup olive oil for frying
2 cups PASTA SAUCE of your choice
for theTOPPING
 
8 oz. shredded mozzarella cheese
1/3 cup shredded parmesan cheese
vegetable spray

Instructions
Pre-heat oven to 425 deg, lightly grease an oven tray or baking dish with the vegetable spray. Set aside.
Whisk together the eggs and garlic in a shallow dish. Dredge the chicken slices into the egg mixture rotating to evenly coat each piece.
Mix the breadcrumbs and parmesan cheese together in a separate shallow bowl. Dip chicken into the mix to coat evenly and set aside. Heat the oil in a large skillet over medium-high heat until hot and shimmering. Fry chicken until golden and crispy. About 3-4 minutes each side.
Place chicken in prepared baking tray or dish and top each breast with about 1/3 cup of sauce and sprinkle generously with the shredded mozzarella and parmesan. Bake for 15-20 minutes or until cheeses is bubbling and melted and the chicken is fully cooked.
