     Spicy Salmon Bowl

Ingredients
Salmon- 1/3 c low sodium soy sauce (2.5 T)
1/3 c EVO (2.5 T)
1/4 c Chili Garlic Sauce (sriracha sauce works) (2.T)
juice of 1 Lime (1/2 T)
2 T honey (1 T)
4 cloves garlic minced (2)
4 salmon fillets (2)
Quick Pickled Cucumbers- 1/2 c rice vinegar (4T)
1 T sugar (1/2 T)
 
1 tsp kosher salt(1/2 tsp)
2 tsp sesame oil (1 tsp)
3 Persian cucumbers sliced
Spicy Mayo- 1/2 c mayo (4 T)
2 T sriracha (1 T)
2 tsp sesame oil (1 tsp)
Bowls- cooked rice, avocado, carrot grated or thinly sliced, red onion, cilantro leaves, sesame seed
Edamame maybe. ?

Instructions
Oven set to 350.Line a baking sheet w foil or parchment. Make up marinade for the salmon. Marinate salmon for 30 min. Place salmon on baking sheet w marinade. Bake 20-25 min till salmon is cooked to your liking. brush some of the marinade on the salmon half way through cooking.
Make the sauce for the cucumbers. Can ad the red onion to this as well. Stir well to dissolve the salt and sugar or microwave for a few seconds to help dissolve. Pour over the cukes. stir to coat. I take out after 5 min.
Mix up ingredients for spicy mayo. I thin with a bit of water and some Greek yogurt. Thin to your liking.
Divide rice salmon pickled cucumbers and avocado carrot and red onion into bowls and drizzle with spicy mayo and sesame seeds and cilantro if using. I sometimes sprinkle some edamame over this as well. Adds a nice texture,
