     Broccoli and Cheese Risotto

3 tbsp butter
1 cup arborio rice
3 cups chicken broth
2-3 cups of broccoli (We used microwave steamable broccoli)
2 cups cheddar cheese
paprika for garnish

1. Cook broccoli on stove top or microwave - set aside. 2. Melt the butter over medium heat in large pot. 3. Add in the arborio rice and stir. Let it toast in the butter for about 3 minutes - stirring occasionally
4. After 3 minutes, stir in 1 cup of chicken broth. 5. Let it simmer until almost all of the liquid is gone. 6. Add the second cup of chicken broth and stir. Again, simmer until the liquid is gone.
7. Add the 3rd cup of broth and stir. 8. Right before all of the liquid is gone, stir in broccoli. 9. Remove from heat and add cheese. Stir until cheese is melted.
