Dice all veggies, the garlic and olives into small
bite sized pieces and mix in a large bowl. Then pour
into a large airtight container like a mason jar.
Leave room for the vinegar and oil. This fills more
than two 32 oz jars. Recipe can be halved.
Mix the vinegar, oil, oregano, red pepper flakes,
pepper and salt in a pourable container. Pour over
the veggies in the jar. Make sure the liquid covers
the veggies, if it does, it can stay stored outside
the refrigerator.
Serve after 12 hours.
Note- For a spicier mixture, double the hot peppers
or double the red pepper flakes.
